Blueberries are a great fuel option for post runs. This is because they are high in antioxidants. Antioxidants offer great health benefits for runners. Antioxidants can help reduce inflammation that can occur after a run. Antioxidants can also help improve and accelerate muscle growth and repair after a run too.

Here is a recipe the whole family will enjoy.

Ingredients
  • 1 cup blueberries, frozen
  • 150g flour, self raising
  • 1/2 tsp baking powder
  • 2 eggs
  • 1 cup milk, of choice
  • Pinch of salt
  • Toppings (optional): add fresh blueberries on top of the pancake when ready to serve.
Method
  1. In a bowl add the flour, baking powder and salt.
  2. Mix well and place to the side.
  3. In a separate bowl, crack eggs and whisk. Then add milk and continue to whisk.
  4. Pour the egg and milk mixture into the flour mixture.
  5. Whisk until you have a smooth batter.
  6. Add the frozen blueberries.
  7. Prepare the pan for frying.
  8. Using a spoon scoop up some of the mixture and pour it into the frying pan. (The spoon size you need to use will depend on the size of the pancake you want).
  9. Fry the pancake for 3-4 minutes on each side.
  10. Continue until all the batter has been used.
  11. Enjoy with toppings of choice.
