Runners need sustained energy and the food we eat is essential to achieving this. Oats are a complex carbohydrate. Rather than causing a spike in blood sugar levels, oats offer a steady release of energy, giving runners sustained energy.

Ingredients

  • 2 eggs
  • 2 tbs water
  • 120g butter, melted
  • 1/4 cup natvia or stevia
  • 1tsp vanilla essence
  • 1/2 cup plain flour
  • 1.5 cups rolled oats
  • 1 cup dried fruit of choice, chopped and with seeds removed (I used dates and sultanas)


Method

  1. Preheat oven to 170 degrees Celsius and prepare a baking tin.
  2. In a bowl add the natvia and butter. Mix together.
  3. Add the eggs, vanilla essence and oats and mix.
  4. Add the dried fruit and continue mix.
  5. Pour into baking tin and bake for 20 minutes, or until golden in colour.
  6. Once cool, slice into squares.
