This recipe is super handy to have on hand in the fridge for a healthy snack to grab hot or cold. You can also have it with a side of salad for lunch or dinner. If you are vegetarian just remove the bacon or you can probably use some salmon pieces if you simply don't like meat. You could also add carrot or capsicum or anything similar you had in the fridge. I love it for breakfast as it's full of protein :) Really simply and quick to make too!
Pre-heat oven to about 180 degrees (Fan forced)
- 2 Large zucchinis (grated) - not peeled
- 1 sweet potato (peeled and grated)
- 1 cup of almond meal
- 1 tsp baking powder
- 6 eggs
- 1 large onion (diced)
- 2 rashers of bacon (fat off)
- Black pepper to taste
Dice onion and bacon, peel and grate the zucchini and sweet potato and add to a large bowl.
Whisk eggs in a separate small bowl. Add eggs, almond meal and baking powder to mixture and combine well. Add some pepper to taste.
Line a baking dish with baking paper (I find that so much easier to work with for this type of dish than simply greasing, easier to clean too!)
Pour all ingredients into baking dish and distribute evenly.
Bake for about 30-35mins or until lighten brown on top and set.
I normally cut the slice into bite size pieces for snacks and then they easily fit in lunch boxes too :)
