Morning tea date after your workout? We've got the perfect recipe that's super easy, full of protein and of course, it's really good for you! In fact the hardest part is trying to not eat all the batter out of the mixing bowl!!
Simply pre-heat your oven to 160c (fan forced or 180c otherwise).
Put all this into a blender and liquefy:
- 6 eggs
- 1/4 cup of coconut oil
- 400g bananas
- 2 teaspoons of vanilla essence
- 6 cooking dates
- 2 teaspoons of baking powder
- 1 teaspoon of cinnamon
- 1/4 cup of chia seeds
- 1/2 cup of almond meal (if you want a less dense but equally healthy option I highly recommend buckwheat flour as an alternative)
Once you've had your 10 min sesh and the batter has thickened (chia seeds will do that) simply pour into a lined loaf tin, sprinkle with dried coconut, sliced banana, almond flakes, whatever you like, and bake for around 50-60 mins, or until a skewer inserted comes out clean.
I normally leave it to sit in the tin to cool slightly, or as long as I can handle the delicious smell wafting through my house, before digging in!
