We all know that oranges are a great source of Vitamin C but did you know that lemons are also a great source of Vitamin C? In fact, lemons offer a range of other health benefits too. They are high in soluble fibre and may help manage blood pressure and also promote good heart health. This No Sugar Lemon Slice Recipe is delicious and simple to make, and contains the juice from this super fruit.
INGREDIENTS
Crust
- 1 cup flour, plain or all-purpose
- 1/4 cup butter, melted
- 1/4 cup natvia
- Pinch of salt
Filling
- 4 eggs
- 1 cup natvia
- 1/4 cup lemon juice
- 2 tsp lemon zest
- 1 cup flour, plain or all-purpose
Topping
- 1 cup icing powder, sugar free
METHOD
- Preheat oven to 180 degrees Celsius.
- Spray baking tray with oil.
- In a food processor or blender add all the crust ingredients and mix for 30 seconds.
- Place mixture into tray and press down to flatten.
- Bake for 15 minutes.
- In a different bowl, combine the filling ingredients, whisk well and pour over the crust.
- Bake for 30 minutes.
- Remove from oven and place in fridge to cool.
- Allow to cool for an hour before sprinkling the icing powder on top.
